Jerk Dippers

Ingredients

  • 2 chicken breasts, cut into strips
  • 100 grams plain flour
  • 2 eggs, beaten
  • 150 grams breadcrumbs
  • 500 milliliters vegetable oil, for frying
  • 500 grams chips or fries
  • 4 tablespoons Selma's Special Sauce
  • 1 tablespoons honey
  • 40 grams rocket, to serve
  • 0.5 lemon, to serve

Steps

  1. Bread the chicken: Coat the 2 chicken breasts, cut into strips in 100 grams plain flour, then 2 eggs, beaten, then press into the 150 grams breadcrumbs until fully covered.
  2. Cook the dippers: Fry in 500 milliliters vegetable oil, for frying (or oven-bake at 200°C) until golden and cooked through, about 10 minutes 10:00.
  3. Cook the fries: Cook the 500 grams chips or fries according to packet instructions until golden and crisp.
  4. Make the dipping sauce: Warm the 4 tablespoons Selma's Special Sauce gently with the 1 tablespoons honey until smooth and glossy.
  5. Plate and serve: Plate the dippers over 40 grams rocket, to serve with the fries alongside, the warm sauce in a small dish for dipping, and a wedge of 0.5 lemon, to serve.

Notes

Medium gives the best balance for dipping; go Mild for younger eaters or Hot if you want real heat behind the honey.
